3 cups Cooked Orzo

1 cup Frozen Peas

3/4 cup (3oz) Feta Cheese

1/4 cup Parsley

3 tblsp Balsamic Vinegar

2 tblsp EVOO

1/2 tsp Salt

1/4 tsp Pepper

1 clove Garlic

Combine and Chill for at least 1 hour. 


Today Meranda made a different version of the Orzo salad by substituting carmelizing corn for the peas and adding cilantro. It was fantastic!! So now we need to decide which one to have at the picnic! I’m leaning toward the new one with carmelized corn! Either is great! This is a very light tasting great summer salad!! Experiment with your favorite additions!
