You don’t always have to have a large oven to prepare a Thanksgiving Turkey! We always find ways to cook and bake even if we don’t have an oven. We had a dilemma of finding a turkey roasting pan that could fit in the Toaster oven.  Meranda got creative and used a 9 x 13 pan and nestled celery on the bottom as a rack to hold the turkey up off of the bottom of the pan so it would roast evenly! We used a breast only this year to roast and it was plenty to feed all of us at the hut and there are leftovers to send home with everyone! 


Pre-Heat Toaster Oven to 350 degrees. Be sure that the turkey is thawed. Make a compound butter (butter, rosemary, thyme, and garlic) that can be rubbed under the skin. Roast until the internal temperature is 165 degrees.


The mashed potatoes & gravy was so yummy!
