We had a great Open House & Picnic at The Hound Hut today! My business partner Meranda who loves to cook and is a Southern gal said she was going to make “Cowboy Caviar” as a side for the picnic. The name sounded fun but I am so not a bean person! She picked up some tortilla scoops at the grocery and I can say I was so amazed that it was so good!!! Everyone that tried it loved it!

The great thing about this is that you can put in the mix anything you want like black beans, jalapeno peppers but since I am new at eating this kind side dish Meranda skipped the black beans and other ingredients that many make in their cowboy caviar. It’s a quick colorful dish that is a great light side to go with your grilled items!

Here is the recipe from todays dish!  Remember you can add your own favorite beans and even things like cherry tomatoes. Just be sure you add enough Italian dressing to cover the beans and peas!

“COWBOY CAVIAR”

2 cans great northern beans drained

 2 cans black-eyed peas, drained

 1 can chic peas

 2 cans whole kernel corn drained

 5 green onions chopped (chop the entire onion-green and white)

 1 large bell pepper chopped (We prefer Red Bell Peppers)

 1 1/2 cups Italian Salad Dressing

Mix beans, peas, corn, onion, and bell pepper in a large bowl. Add dressing and toss to coat. May add more if desired to ensure everything is coated. Refrigerate for at least 20 minutes before serving.
