This weekend’s Hound Hut side dish recipe was the Parmesan Zucchini. It tasted fantastic! Of course you can be creative on what you put on our zucchini but here is a recipe in case you need one. We are having a great summer grilling and eating vegetables from the Hound Hut garden! We had buttered sweet corn on the cob and boneless chicken on the grill! Yummy!

  • 4 zucchini slice longways
  • 1/2 cup grated Parmesan
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • Salt & Pepper, to taste
  • Couple tablespoons olive oil
  • Preheat oven to 350 degrees
  • In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste. We substituted Seasoning salt which is what we had on hand.
  • Toss the zucchini with olive oil and place on baking sheet. Spread the Parmesan mixture over the zucchini slices.We also sprinkled some additional parmesan sprinkle cheese on top! Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until the crisp and golden brown.
