Feeling the need for some comfort food this week. The great thing about whipping up these meals you don’t have to be a pro! Use ingredients you have on hand!

This can be made without chicken for a “Meatless Monday” dish thats still comforting!!!

One recipe we tried was a casserole that reminded us of Thanksgiving!

1 Box of stuffing mix (we used cornbread flavor that we had on hand)

1 Can Cream of chicken soup

1/2 cup melted butter

1/2 cup sour cream

4 cups shredded zucchini

4 cups cooked chicken (we used less this time approx 2 cups because we are cutting down on meat)

Small onion grated

Mix all of the ingredients together and bake at 350 degrees for 40-50 minutes.

Reminder For those who are vegetarian can leave out the chicken – Becomes a great Meatless Monday dish!!
