Whats great about recipes is that you can change it depending on what you like! Meranda made a quick easy dip today that could also work well as a side dish. We used tortilla’s to scoop it up and just sayin it was excellent!! We have tried a few corn dip recipes this year and I have to say that her version is the best!!

2 cans whole kernel corn drained

1 small can Rotel Diced tomatoes & Green Chilis

2 cups colby jack cheese

2 cups mayo

Mix ingredients together and put in 9×13 baking dish. Bake at 350 degrees for 40 minutes. Let cool for a few minutes before serving. If you like chopped scallions just add some to the top before serving. Yummy!
