Cut a seedless watermelon into slices cutting off the rind. Brush a little vegetable oil, salt and pepper on the watermelon slices. Place on a hot grill for a minute on each side. Cut up into cubes and refrigerate until cool.

When you are ready for dinner combine  a bag of Baby Spring mix,  watermelon, oil and vinegar dressing, and grated parmesan cheese. Toss and enjoy!! Light and tasty!
